On Saturday night I made Turkey Chili with black bean corn cakes.
So for the chili -
- Saute in olive oil 1 green pepper, 1 jalapeno and 1/2 red onion
- add 2 lbs of ground turkey (or chicken, beef, pork)
- Salt, pepper, cumin and garlic powder to taste
- let the meat cook until there is no pink
- add 1 28 oz can whole tomatoes, half the juices drained. I like to squish the tomatoes up a little so they're not so big
- 1 can tomato paste
- 2 - 3 tablespoons steak sauce of your choice (I use A1)
- 2 Chipotle in adobo sauce
- 2 Tbs. of adobo sauce from chipotle in adobo can
- taste test to see if it needs any more salt or pepper.
- Throw in anything else you might think is yummy!
For the corn cakes, I just bought 2 boxes of Jiffy corn muffin mix and made that as directed on the box. Then I added 1 can drained black beans, 1 can drained corn and a handful of colby jack cheese. Then I cooked them like pancakes on the griddle.
I like to put some chili on the bottom of the bowl then add cheese on top -
In other news, this is how my watercolor is coming along.
He is getting there. I had my first watercolor class on Saturday and the teacher was able to give me some guidance so I know what I am doing now! I am pretty happy with him, I just need to add some fine details. He will be a glorious octopus.

That corn and black bean pancake may be one of my favorite things that you make. It is super good.
And Godrick is glorious, of course.
AHHH! I can't wait to try those cakes sometime! My mouth is watering right now.
Also, Godrick is glorious. He looks so cool. What do you do with your watercolors when they are done?
Um usually they sit in a pile in the spare bedroom >.< but I think I might frame him and put him in the bathroom!
